These cookies look super fun and fresh and are great if you love both chocolate and vanilla. I’ve seen these cookies all over Pinterest, and I’ve always wanted to try them. But they turned out way better than I expected, so definitely try them out yourself!
Ingredients for the Pinwheel Cookies:
2 cups flour + 1/2 cup
1/2 Tsp baking powder
1/4 Tsp salt
1/2 cup (1 stick) butter, softened
3/4 cup sugar
1 egg, beaten
1 tsp vanilla extract
2 tbsp cocoa powder
1/4 cup chocolate chips (I used semisweet), melted
1/2 cup cream
Directions for the Pinwheel Cookies:
Sift the dry ingredients: flour, baking powder, salt
Beat together the butter and sugar, add in the egg and vanilla. Scrape down the sides and continue to beat
Add in the dry ingredients; the dough should be soft.
Split the dough in half
In a separate bowl, melt the chocolate chips, add cocoa powder, and cream
Add the chocolate into one half of the dough, beat it in, and add the half cup flour.
Turn out the dough and add more flour if needed to make both doughs the same consistency.
Roll out the vanilla dough, place the chocolate dough on top and roll it out.
Roll both together into a log lengthwise as neat and tight as possible
Wrap the whole log in plastic wrap and leave it in the fridge for at least 3 hours.
Once it’s been 3 hours, preheat the oven to 350 F, take the log out and roll it on the counter to even it out a bit.
Cut the cookies in 1/4″ slices and arrange them on the pan.
Bake for 11 minutes, (don’t overbake)
Cool for 5 minutes on the pan before moving them onto a wire rack to cool completely.
